I was wondering if it is possible to use this tool to track ore and log nodes ?
Also, not really related, but is PAO supposed to make GW2 lose windows focus ? Don't know if this is a bug or supposed to be like this.

Yes, you can use the Tasks Tracker for keeping track of ore and log nodes. In case you hadn't figured it out yet, you can add tasks to the task tracker from the menu of the tracker (click the icon in the top-left corner of the window).
And yes, interacting with the PAO windows does cause GW2 to lose focus. Due to the nature of the program, there's nothing I can do about that, sorry.

But how exactly ? Just so I am clear, I am not saying specific nodes but all nodes that show up on the minimap, was wondering if that is something that PAO can do.
Because if it can I don't know how because when I add Iron Ore or Copper Ore to the tasks for example it doesn't seem to do much :/

No, unfortunately there isn't an option to automatically show all nodes. You'd have to load a tasks file with the information or add each node youself.

Thought so Just one more question, completely unrelated, but, do you think PAO would have any issues with running side by side with Immersive Combat Mode ? This is ICM btw in case you are not familiar with it: wesslen.org/ICM/

Although I'm familiar with it, I've never used ICM myself, but there should be no problem running PAO side by side with it. The PAO is essentially just a bunch of transparent, always-on-top windows, meaning it is entirely stand-alone and will never cause issues with other overlays, graphic modifiers (like sweetFX, gemFX), or mods (like ICM).
