I really like your zone completion assistant, but was wondering if we could create profiles so that I can keep track of what has been done or discovered for specific alts.

The zone completion assistant should already keep track of unlocked/completed zone items individually for each character. So, if you mark one POI as completed for character X, it should still be marked as not completed for character Y.
